My friend made this for a get together and I couldn't believe how easy and yummy it is. I have made it...in fact, just last week and it is very good.
I can't think of the brand of "dinner in a box" it is...but it is there by the Mac & Cheese aisle.

Buy a box of Betty Crocker type(?) dinner in a box for Mexican Taco Bake Dinner(?)
Mix as directed, but add 1/2 lb - 1 lb of cooked ground beef.
Bake as directed.
Once baked, spoon heaping spoonful onto flour tortilla. Roll up.
In a 13x9 baking dish, pour in 1 can of enchilada sauce.
Take rolled up tortilla shells and roll in sauce, place in dish w/ seam side down.
Repeat for all tortilla's.
Top w/ 1 can of cheddar nacho cheese sauch.
Bake until cheese is melted through.
