Default tummy troubles

Suddenly Paddington has developed a very sensitive tummy. All summer he was doing fine with Evangers wet food mixed with holistic blend dry food. then he developed really bad diarrhea out of nowhere about two months ago.(like little brown puddles...sorry if thats TMI) We went to the vet near my parents house where we were living at the time and his treatment worked well for about a week and then it came back. (all we fed him was boiled chicken and rice...though potentially one batch of rice had some oil in it b/c it was from a restaurant. (we were moving)

We went to our regular vets office where the original owner of the clinic has returned. He is new to us but he is awesome. He did a thorough exam and put paddy on I/D. We followed his instructions on how to transition him from I/D to regular food but for some reason every now and again his poops are not good.

I am wondering if the evangers is too rich for him now because he has not had dry food with it...just I/D and evangers supplemental (hunk of beef)
I am also wondering when I will be able to transition him back to dry food.
I don't want his little teeth to rot!!

Any of you guys have a good food for doggies with sensitive tummies or know how to transition from I/D to dry food. I'm calling the vet again tomorrow to get his method but just wondering if you guys have any experience with this.
