Oh my!!!! I know you are glad she is so sweet 99% of the time but I know you are troubled and puzzled why 1% of the time she is mean to you. I have no advise for you but I am sure someone on YT can give you some good advise.
Hopefully, she will never bite you again!! I am sure that is very scary for you. Keep us posted.
