It could be her anal glands emptying. Is there any red in it? What is she eating? Any recent diet changes.
They can get a mucous poop from eating some bizarre thing too - like a piece of toy, or some household thingy. Maybe watch for her next 2 poos and bring one to the vet if there is still mucous. Mucous is from ibd/ibs too, but it probably isnt' that.
