You'll have to figure out what you CAN and CAN'T eat as a snack at your desk. I CANNOT eat fresh fruits and vegetables (as someone suggested to keep at your desk). When I eat them they make my stomach growl and I feel VERY VERY hungry and then I eat everything in sight.
I use the Weight Watchers systems and so I have to look for one or two WW point snacks. There are some 2-point bars that I can eat or low fat microwave popcorn. I can also eat a bit of low fat granola with plain non-fat yogurt. It's taken me a long time to find out what works for me. I have to snack on something that tastes good to me; fresh fruits and vegs do not taste good to me and if I try to eat them, then I feel deprived and I eat everything in the house.
To me, you have to find a method that works for you. All these tips are great, but they may not work for everyone.
