Since I am a veggie (as my fiance calls me) and he isn't, I always find ways to substitute what I make for him. I have been dying for some spinach lasagna these days.
Barnes & Nobles usually has some really good Vegetarian cookbooks in the bargain section. I would take a look there next time you go. I usually find my recipes on the internet.
