If you obtain a copy of the Illustrated Standard from YTCA it explains it to the fullest.
The tan should be 3 shades. I think the gold has become a word used by breeders, just because of the discription is really much more related to gold than tan.
And yes, I've seen beautifully structured black colored yorkies.
