Tipping the ears means shaving the top part of the ear (normally about 1/4 - 1/3 of the ear). It give the ears a clean and neat appearance. Tipping the ears is the common thing to do - as in a yorkie being shown would have its ears tipped. Here is a closeup picture of Lacy - not the best pic but you can see that her ears are topped.
