I make it the old fashioned way. If I can find chicken backs I use them. I wash them thoroughly, put them in the crockpot cover with water and let them cook all night. I strain the "juice" pick off the tidbits of white meat and reserve. I cool the broth in the refrigerator so I can completely de-fat it and I have the best chicken broth on the market. Free range drug free chicken ROCKS, but unfortunately it isn't widely available to me.
If I can't find chicken backs I use either a whole chicken or chicken breasts and then use the mean for chicken salad. I make ONE MEAN chicken salad
