I completely understand what you're going through...my Tobi does the same thing too. What I find works is yelping and leaving the room for a few minutes (5-10 minutes), so that your pup knows that when they bite too hard, they'll lose their playmate. I found that helps me a bit to calm my pup down and to play nice.
