Fresh Tomato Salsa
1- 1/2 lbs firm ripe tomatoes, cut into small cubes, about 3c.
1 lg. jalapeno, seeded, minced
1/2c. red onion, minced
1 small garlic clove, minced
1/4 c. cilantro leaves, chopped
1/2 tsp salt pepper
2-6 tsp. lime juice, from 1-2 limes
sugar to taste

Set a colander over a bowl add the cut up tomatoes to drain the excess juice for about 30 min. As they drain layer the jalapeno, onion, garlic & cilantro on top. Shake the colander to drain off the excess juice. Discard the liquid.Transfer all the ing. to the bowl. The addition of sugar & lime juice will depend on the ripeness of the tomatoes so add & taste. Start w/ 2 tsp of lime juice.If you want more heat add some minced up seeds.

You can roast tomatoes that are cut in half on the grill til they are chared for a smoky taste.
