As the breeder, you are the advocate for the well being of your pups. If you don't wish to have visitors until they are older, say no. If this person could not wait, then she is free to look elsewhere for a pup. Reasonable people will understand your reasons for having them wait.
If you are unsure of the possible adult coloring, just say so.
I do not allow anyone to pick pups. I make the choice on which pup is best suited by temperment to each environment. I do take preferences into consideration and will allow selection between two if I have two very similar pups in a litter.
