I am not totally familiar with South Beach guidelines but I do know that it is low carb. I have been doing low carb since october and have been very successful at weight loss. I have found a low carb substitute for just about anythin I crave....accept rice!!

I don't really do recipes as our diet is very simple and we eat mostly whole unprocessed foods. Like chicken and veggies for dinner, Strawberries and whipped cream for dessert, Egg & veggies omelet for breakfast, tuna salad for lunch. We use guacamole and ranch dip to flavor a lot of things.
They have really great tortillas made by Mission that are so much like the real thing that my kids haven't even noticed the switch. I use these for lots of things like fajitas or I make them into chips with salsa.
Good luck! My husband also does low carb and he has lowered his blood pressure and his diabetes went away. I've lost 50 + pounds and it's been a life changing experience for the both of us.
