Oh My.......I wanted to laugh when I read your post........but I know you are serious! It sound like she knows exactly what she is doing and that is why she is hiding when she does it........she must be quite a character!
I was going to suggest maybe offering treats again for her pottying in the right spot, but if you can never catch her because she is hiding, I have no idea what you should do........sorry I'm no help!
