Here's a soup I make a lot this time of year.

Sausage and bean soup

1 onion, diced
2 T olive oil
2 chicken sausage, sliced (or use italian or whatever you like)
5 cloves garlic, minced
2 c stewed tomatoes (I run them through the blender)
1 c chicken broth
2 Tbs tomato paste
1 15 oz can white beans
2 tsp fresh rosemary or 1 tsp dried
salt and pepper

In a large saucepan saute onion in olive oil for 5 min over med heat. Add the sausage and brown with the garlic. Add remaining ingredients and cook on low for 45 min.


Corn Chowder

2 T butter
1/4 c onion
1/4 c celery
2 T flour
3 c milk
2 c meat (smoked sausage, cooked chicken, whatever you want)
1 1/2 c corn
1/4 tsp thyme
1/4 tsp red pepper
salt and pepper
can of cream corn

Saute celery and onion in butter over medium ,add flour, stir 1 min. Add everything else and keep at a low boil until thick, about 5 minutes.


Don't let the amount of ingredients scare you away from the recipes. They are really common, inexpensive ingredients and the actual amount of work is very little and will help you learn basic skills like dicing and sauteing. Have fun and let me know if I can help.
