i just use my electric skillet for anything that I would cook on the stove - but I guess I use it most often to cook things that need to be simmered for a while - like things where you add raw rice and liquid and you have to simmer it till the liquid is absorbed and the rice is tender.

I'm not too good with recipes - I just usually throw in things that I like. One thing I make and always use the electric skillet for is Spanish Rice.

Brown a lb (or 1/2 lb) of hamburger
cut up onion and green pepper and brown with hamb
drain off fat
add 1-2 cups of minute rice, depending on how much you want to make and then add the same amount of liquid in the form of tomato sauce, catsup or any kind of combination of tomatoey liquid that you like - e.g., rotel.
I usually put in a can of chopped tomatoes and a can or two of chopped green chilies
then I use whatever mexican seasoning that I have on hand:
cumin, red pepper, chili pepper, tobasco sauce, etc
I usually throw in some salsa that I have in the refridgerator
As you can see my "recipe" is pretty "loosey goosey"!

Then I simmer it all together - till the rice is done - but it can simmer for as long as you need it to. If it gets dry, just add more water, catsup, tomato sauce, or some liquid.

This will also make a great stuffing for stuffed peppers. Sometimes we eat it as an entree and sometimes it is a side dish.
