If you love that, you'll love this one. Originally from a woman's day magazine, I think, but I've tweaked the dressing.
You gotta wing it: a small hand full here and there.
1 bag of baby spring mix lettuce
sliced fruit or berries: I get creative here, I've used grape halves, sliced strawberries, or whole blueberries, or diced fresh pears.
Cheese: I usually use blue cheese crumbles, but with pears, AGED swiss is very good.
Honey roasted cashews or peanuts
store bought roasted chicken, pull a handful of meat shreds off and toss in.
Dressing:
juice of one lemon
1-2 tb of sugar, stir till it dissolves
a pinch or two of salt
fresh ground black pepper
1/4 cup extra virgin olive oil.
whisk together and pour on the salad.
Yummy, and very fancy looking. I have this fantasy of having a few friends over for a luncheon with this salad and some pretty tea breads LOL
