3 eggs
1/2 cup butter, softened
1 1/2 cups white sugar
3 tablespoons all-purpose flour
1 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon lemon juice
1/8 tablespoon freshly grated nutmeg

1 (9 inch) unbaked pie crust
DIRECTIONS
Preheat oven to 350 degrees (175 degrees C).
Beat eggs until frothy; add butter, sugar and flour. Beat until smooth.
Stir in buttermilk, vanilla, lemon juice and nutmeg; pour into pie shell.
Bake for 40 to 60 minutes, or until center is firm.
Then put it in the icebox and let it get nice and cold. Its REALLY good with a nice glass of ice cold milk.

Here's a variation of the buttermilk pie - for those of you in Texas or near a Luby's cafeteria, you can try this pie there. It is very very good. The recipe is from the Luby's cookbook

Buttermilk Pecan Pie
1 cup sugar
1/3 cup flour
1/8 tsp salt
2/3 cup butter, melted
1 1/3 cup buttermilk
1/2 tsp vanilla
1/2 cup pecan pieces
1/2 cup raisins
1/4 cup coconut
unbaked pie shell

In a large bowl combine sugar, flour, and salt. Whisk in melted butter, buttermilk and vanilla. In a small bowl, toss together pecan pieces, raisins, and coconut. Spread pecan mix into bottom of pie shell, then pour in buttermild mix. Bake at 350 for one hour and 20 min, or until pie is set in center and golden borwn. Refridgerate.
