I don't have any advice, except that I would call the local natural/organic garden store or look on the internet for that type of store and search their website for answers.
Some of the answers to your questions depend on where you live. Some varieties of flowers/vegetables will do great in one part of the country and not do well in another area. I find my local garden center (NOT WALMART OR THE CHAIN GARDEN CENTERS) have the very best information. What you want to look for in roses/shrubs/vegetables are things that are native to your area. Those are the BEST types of plants to put in - something that was started in another area of the country - may not do well in your state.
The natural or organic garden store will know what to do to keep the rabbits out. It is probably like planting something that they don't like to smell around the perimenter of the garden. I don't know what that might be, but I bet the garden folks know.
