Another great use for tofu!
Since I had it open and am wanting to add it to my regular "diet", I thought of another way to use it on my salad today for lunch.
I sprayed a small skillet w/ olive oil - I ground up some whole wheat crackers (the low sodium kind) - mixed in some garlic powder and freshly ground black pepper - I cut the tofu into chunks and breaded them w/ the mixture. Put them in the skillet until they were browned and added them to my salad!
Wow! Were they good! My daughter thought they were croutons until she bit into one and discovered that they were soft not hard. She liked them!!! YUMMY! I might try w/ different spices too.....just thought I would share.
