Sorry for posting this late - we decided to make a BIG salad yesterday for lunch w/ lots of fruits and vegies instead of the eggs. But I made it this morning.
I sprayed my skillet w/ some olive oil (I put my olive oil and canola oil in spray bottles now - that way, I don't use that much). I did 2 whole eggs and 3 egg whites (some are now saying the whole egg is good for you and others are still saying just do the whites). I put some frozen spinach in it (use to do fresh, but w/ the recent scare of fresh spinach, we started buying frozen) and I cut up quiet abit of my tofu and tossed it in there while everything was all cooking together. I used my pepper mill for some freshly ground black pepper and my new sea salt grinder too! Served w/ a slice of 100% whole wheat bread and it was WONDERFUL!!!
Couldn't even taste the tofu at all! I guess it really does take on the flavor of the other ingredients. I have to be honest, I told myself that I would not taste it or smell it before I ate it. So I didn't - I guess I was afraid it would be gross! Anyway, we loved it!
Nikki, you might have to try it this way - if you don't like spinach, you don't have to add it, but it was yummy!!!
