If you try it please let us know how it turns out. I made beef strogonoff (sp?) once and substituted firm tofu for the beef. Honestly it was really gross. We couldn't even eat it. Even though it was firm, the texture reminded me of eggs so maybe putting it in eggs would be a perfect match. I'd love to like tofu but I haven't given it another chance. If your egg dish is good, I think I'll have to try it again.
