My favorite mashed potatoes are with gouda cheese. Make mashed potatoes as usual, adding the salt, pepper, butter and milk or cream. Then add about 1/2 - 1 pound of shredded Gouda cheese (depending on how much you are making). Stir til it melts, might have to put it back on the burner for a little bit if the potatoes have cooled too much. This is best using the red skin potatoes. I could eat these every day!
I like to make a lot of soups in the winter. Chicken Corn Chowder, Chili, Vegetable beef, and Ham and Ben soup are our favorites. If any of those hit the spot, just ask and I will think of the recipe. But I am a "throw it in" cook so not always sure of measurements. |
