We feed the same types of food for breakfast as we do for supper.

1/3 meat (usually chicken, lean beef, turkey or lamb)
1/3 veggies/fruit (carrots. beans, asparagus, peas, blueberries, apples etc.)
1/3 starch (ww pasta, brown rice, sweet potatoes, cooked oatmeal etc)
A small dollop of plain (no sugar yogurt) or low fat cottage cheese.

We also add a dribble of canola oil or olive oil every couple of days and a smidge of salt if she is not having cottage cheese (as the cheese has enough salt).

The amount we feed depends on how active she is going to be so we can maintain her weight.
