Sweet N' SOUR CHICKEN
3 lb chicken cut into serving pcs, and skinned
1 tbsp veg oil
1 20 oz can pineapple chunks drainned, RESERVE JC for later
1 1/2 c of the reserved pineapple jc (add water if necessary)
1/2 c celery
1 green pepper or 1 red pepper, or a lil of both for color. Cut in chunks
1/4 c brown sugar
1/2 c vinegar
2 tbsp soy sauce
1 tbsp catsup
1/2 tsp worcestershire sauce
1/4tsp ginger
2 tbsp cornstarch
2tbsp cold water
Heat cooker, add oil and brown chicken. Combine pineapple jc and remaining ingredients, Except pineapple chunks cornstarch and water, our over chicken. Close lid COOK 8 MINUTES, pressure regulator rocking slowly. Cool at once. Put the chicken and vegies on platter, leaving liquid in cooker--mix cornstarch with cold water and mix into hot liquid. Cook and stir until liquid boils and thickens. Add pineapple chunks stir, then pour over chicken.

This is one of the more complicated meals I tried. But Was it good! I would serve this to company for sure, if they liked this sort of thing
