Question Housebreaking new puppy

We just got a new yorkie, Angus, on Monday. He is 10 weeks old. The breeder had him trained fairly well to the pads. She also left water and food out 24/7.

From what I am reading, its best to feed on a schedule and not leave his food out all day. Is this correct? Should his water be left out all day? Should we remove both at night?

We have him set up in a room with his crate. He has really taken to the crate and we've had no problem with him sleeping there or just playing with his toys. We haven't been closing the crate at night and we have left a pad in his room which he seems to only use at night. Should we remove this pad? Should he be closed up in the crate when he's in it?

We moved a pad outside and we're gradually moving it towards the grass. He's not really giving us much indication/warning when he needs to go so we've just been taking him out first thing in the morning, after his naps and before and after playing.

How does all of this sound? We've never had an indoor dog before so this is all new to us. Thank you for any and all advice.
