This recipe is from an Italian restaurant here in town. We have a very large Italian population here so there are LOTS of Italian restaurants. If you like fries, you'll LOVE these broasted potatoes. They're YUMMY and home made.
Peel and dice 2lbs potatoes (or amount needed)
I don't dice the potatoes evenly...just cut up the potatoe into 1.5"-2"chunks
Soak the potatoes for about 3-4 hours in icy cold water, changing the water every hour to ensure it stays cold and clean.
After 4 hours, DRY potatoes THOROUGHLY and put in bowl. Toss lightly with olive oil, thyme, oregano, garlic powder, ground parsley. (I usually just grab any spices I have on hand and use them

)
Spread out on cookie sheet in one layer.
Cook at 400 degrees until browned.
These usually don't need to be turned if you cook them on the top rack.
They are delicious and go with any meal..I usually do them with bbqued chicken or steak.
Great....now I'm hungry!!!
(When we cook regular frozen fries, we do them in the oven and spray them from a spray bottle (from Dollar store) filled with veggie oil. This makes them crispy and good.)
