I agree that none of those dogs is known for exceptional calmness, but then again, within every breed there are exceptions and differences in personalities! There is a long haired Chihuahua on our block who is THE most laid back and calm dog I have ever seen. She is friendly and playful, but not hyper!
The only dog I have had that was calm were my Pekingese!

Something else to consider is how much grooming you want to do or want to pay for. Most poodles are professionally groomed, Maltese take a bit extra work to keep them snow white and of course Maltese, Yorkies and Poms need combing out daily. A short hair Chi wouldn't need as much grooming as the rest, a long haired Chi would need a bit more. Thinking about that might help narrow down the fun choices!
