I suggest writing her a very friendly letter stating what you've outlined here for us - regarding the contract that she has signed and each clause that she has violated. Give her a breakdown of what exactly you are charging her for. Keep it professional and friendly (despite how you really feel). This way if you do take her to court - this letter can be used in court as well - as in you've given her the chance to fulfill her end of the contract and she disregarded them.
