Sounds like the only way you are going to get the job done is by just being the "bad guy" for a little while. Put him in the crate and close the door. Perhaps you could put a small favorite treat in the back of the crate to give you some time to shut the door before he breaks out. Also, until he learns that the food really won't be there when he feels like eating I would do as you suggested by putting it out and then taking it back up after a short while. He will catch on quickly. Best of luck to you!
