This is the BEST cheese dip! Everytime I need an appetizer for something, I make this and I always get rave reviews. I use the sausage that comes in the plastic wrap that looks like slice-n-bake cookies, 2 cans of Mexican rotel (not drained), and 1 lb block of Velveeta cheese.
Put the 2 cans of rotel in the crock pot first, juice and all, then cut the velveeta cheese into blocks and put that on next and go ahead and turn on the crock pot and cover with a lid. Then brown the sausage. Drain the sausage and pour it on top of the cheese in the crock pot. After about 30-45 minutes, make sure you stir it often or it will burn to the bottom of the crock pot. But you want to give the cheese time to melt a little before you stir it for the first time.
Everytime I make this I get the MOST compliments. It's not white cheese dip, but you'll have to try it!
