I have a similar tale, not Yorkies, but hey!. Neither bitch was neutered. Both died far earlier than necessary. One from a ridiculously late operation to counter pyrometria the other through mammary cancer. Both can, apparently, happen to whole bitches that have never whelped. In those days vets didn't seem to care a jot about getting bitches spayed. Now it is somewhat different - they may even have a professional obligation to recommend this as strongly as they can.
Princessgracie, you seem to trust your vet (maybe even like him). Why not ask for an appointment (without the dogs) to discuss this with him and find out his reasons for such strong views that cause him to issue an ultimatum. After all no vet wants to turn away business without very good reasons.
Then after you have taken on board what this chap, who actually knows your dog(s) has to say, you may be better able to decide what to do. Good luck.
