I need some new recipes for dinner. I will post one and if anyone wants to share theirs that will be great.
Chicken/Penne Pasta and Tomatoes
4- boneless Chicken Breasts-diced
1- 24 oz can of tomatoes
1-large onion- chopped
1- cup of half and half or cream
1- small pack of goat cheese
12 oz penne pasta
basil, terragon , rosemary and garlic
Chop onion and saute in olive oil with 2T each of basil and rosemary and 1Tof tarragon or to taste (I use more spices)
Add canned tomatoes and cook down for about 30 minutes- simmering till most of the liquid is cooked out and a paste is made.
Dice Chicken and saute in olive oil and 2 cloves of garlic until cooked
Cook Pasta
Add chicken to tomatoe mixture, stir in cream and break in goat cheese- stir till cheese is melted. Toss with pasta and serve with romano or parmesan cheese. uummmm |
