The ear size in Yorkies can vary. But when you shave the entire ear and indeed the entire dog the ears really will look big.
Usually you have hair on the ears and fringe of the ears. In grooming you only want to shave the top 3rd of the ear. The hair on the ear will hide some of the ear size. But if they have big ears you aren't going to hide that the ears are big even with the hair on them.
