Give the cats their own room. Block off a room with a baby gate and keep the cats food, water, & litter in there that way they have a safe place to relax and get away from the pup for a bit. Something that is working with my dog is when the cat is in the room I gently lay my hand on him and tell him that it's okay kitty's in the room. You have to show the pup that the cat is part of the pack and not to be messed with.
