You will definitely know when she is in heat. She'll start licking that area quite a lot and then you'll notice the swelling. THEN, the bleeding starts...bright red for the first week (or so). The second week is when they are ready to breed. Bleeding will lighten up some and she will be very large in that area. Third week is when they start to go out of heat.
