The flavor of the bread is determined by the beer you use. You don't want to use light beer. I love this bread with homemade soup in the winter time and I use a dark ale so it has a strong flavor of the hops. The top is a little lumpy looking but reminds me of European bread - which I like...
P.S. I don't know if you can substitute the butter - I somewhat doubt it but you are the expert on that..

Do you make this in a single loaf pan or can you divide the dough and make rolls??? It sounds yummy!!!
