Whatever the breeder selling these mixes want to call them, they are still a mix between at least two breeds. If you don't know for sure what breeds the parents are, there could be more breeds involved. Which is fine if you don't care if you get a crossbreed or a purebred Yorkie or Maltese.
As such, with any crossbreed you can get anything in respect to size, look of either breed and everything in between. You could end up with a dog 5 lbs or 25lb, it may look more like a Yorkie, more like a black maltese or anything anywhere between.
In developing purebred breeds, it took many generations to develop the breed you see today, for example the Yorkie which started about 100 years ago. A purebred however is not continued by continuing to breed crosses, a purebred will breed true. So if you breed a registered purebred Yorkie to a registered purebred Yorkie, you will get puppies that look like Yorkies. There may be some variation in size and quality of the puppies etc but that will also depend on the quality of the parents and the quality of the dogs that produced the parents. If the parents were pet quality and those generations before them, you will likely get a very pet quality puppy.
A yorkie maltese cross is produced by breeding a yorkie and a maltese. However, you will not know if other breeds may have been involved if the Yorkie and Maltese were not purebreds.
