I am picking up my dog on Saturday (10hour drive). I want to start training right away. I dont' want to keep meat in my pocket for 5-10hours. I also want to give treats for housebreaking and don't want to run to the fridge or keep the meat out n the table or in a baggy.

IMO I would not worry about training him in the car, he is going to be nervous, then he has a 10 hour drive on top of that, I would just hold and cuddle with him to get a strong bond going with him, give him a few days to get adjusted to you and the family, then start training him.
The beef bites i was talking about come in a package and need no refridgeration. I got them at the pet store.
