I agree with the recommendation to check with the vet if this is a sudden change in personality.
Assuming nothing physical is going on, I'd recommend that you meet with a behaviorist. The number one cause of dog bites is not dominance, bad genes, etc. It's fear. The description you gave of your dog's sudden fear of the car makes me think this is true in your case. The treatment if this is the case, would be quite different from the commonly held "show her who is boss" idea. I'd get a professional's help.
I understand your feelings. I grew up with the "once a dog bites, he can never be trusted" theory, too. Now we know that it simply isn't true. MANY- if not most -dogs can be rehabillitated. The key is figuring out exactly what sets them off and then working on that particular problem. The fact is that ANY dog can and will bite if pushed too far.
If you feel this dog is too big of a risk and you can't invest the time/money in working through her issues, please try to get a Yorkie rescue organization to take her. There is no need to put her down.
