If the mother is strong, they can be chipper and energetic until the day they give birth, Animals really can't afford to go on bed rest in the wild and that has not changed since we domesticated them. Its possible she is not having that many pups or they are small and not making her very uncomfortable.

The due date was on the 21st according to the first day you mated her but semen can live in the female for several days after the tie so it is possible she was not impregnated until after the last tie. Sometimes it takes on the first tie but not always. That is just the earliest date you need to watch for to be safe, give or take a few days. If you are worried or she is in distress or in pain then trust your gut and take her to the vet but most likely she just is not ready.
