Since you just got her, I'd def do a fecal asap. And if she is refusing to eat except for very high-value items (cheese etc) - that lack of appetite is most definitely a sign for concern as inappetance in dogs is a cardinal sign of something amiss. I'd really get her to a vet asap. Or, contact that shelter and let them know she's had diarrhea since adoption and ask their vet to see her.
