It sounds as though she could be dealing with several issues. You are right to be concerned about dehydration. In combination with anorexia (not eating) even one episode of diarrhea send up red flags.

Links to a few articles follow. Were I in your shoes, I'd be on the phone with the vet. Collect a stool sample if you are able.

Separate from your call to the vet, you may want to contact the "local shelter" where she had been housed to let them know about her condition. They may have information helpful to you.
