I really don’t understand his condition, but I wonder if you could remove his food a few hours before taking him out before you go to bed. I would not limit water. Crating him and limiting his area are great ideas that I would try, but I would limit food if it would not hurt him too because having to poo and hold it all night might be very uncomfortable
