I agree with all of the suggestions above. I have had blind dogs and actually have one right now that has very diminished vision.

The most important thing is providing a safe, unchanging environment. As for touching and holding, she may turn around...she may not. The best advice I can give you is to let her smell your hands frequently especially when you are feeding her and/or providing her with her needs. That way she learns she can trust you. My foster Charlie has issues with being held....if I need to pick him up, I approach him slowly (he sees shadows) and put my hand out for him to smell....he usually stands still for me to pick him up. He lets me hold him now for short periods of time, but gets very antsy quickly and I just let him down to do as he pleases.
