Any yorkie I had would get this once in a while, diarrhea with blood and mucus, it was a bout of colitis. They got meds, ate chic and rice, in a few days it cleared up. It was not a frequent thing, one yorkie was 13 yo and had it twice in her life, my other gal was 17 yo and had it once in her life. Yours getting this once a month is not a good thing. The next time this happens I would take the stool sample to a different vet for a 2nd opinion. Keeping a dog on chic and rice for long periods of time is not good either, there are no nutrients in chic and rice.
