So, he's not "good with high protein" (that was the vet's prognosis...?!) - so then why not just feed a moderate protein kibble...?

You're feeding 17% protein w/ the vegetarian diet - no different than many kibbles.

What is being achieved with potato protein vs meat protein?

I don't get the logic here, nor the clinical evidence of what the vet has chosen.
