I've heard of anesthesia having an impact on human hair, so it is possible. My boys have never shown any changes though.
Since you are already feeding a good diet with oil, you could look to the outside and try different hair products. A good shampoo and conditioner can be helpful.
No breed should lose 90% of coat at any time. If that happens again, I would consider skin issues or an underlying health problem.
