Robyn, my better half won't eat any of the wild mushrooms I harvest, so I cook them for myself in a bachelor fashion, very simplified..... fry in butter gets them about 80% of the time, sometimes I'll add that to omelettes or other dishes, soups, on top of spaghetti, along side of a steak or roast. Very mild spices if any at all, the mushroom flavor is lost so easily for most mushrooms.
I'm sure you have morels, most of the direct sales I did this year were to people with fond memories from when they lived back east and were younger. Those would be naturals of some sort, sometimes referred to as blonds, but many species of morels.... the morels I pick are fire morels, they pop up about a year after a major forest fire. Sometimes referred to as blacks... but also, many species are included in that also.
