It all comes down to knowing and trusting your breeder before you buy and if you are a breeder, knowing and trusting the person you are selling your pup to. Just because a pups parents are healthy and champions does not guarantee that the pup will be. I agree with you about the trust factor and health contract.
Maybe I misread the OP, but it sounds like she couldn't find the sire listed by name on the AKC site and that makes her nervous. That would make me nervous too, if all I had was a photo from the breeder.
